Baked beans

Home Made Baked Beans (credit Meher Deepak Vatvani)

 

Ingredients:

  • 1 clove of garlic crushed

  • 1 onion finely diced

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon herbs

  • 1 teaspoon of salt

  • 1 cup dried cannellini or beans of choice

  • 1 can crushed tomatoes

  • Vegetables of choice

  • 1 tbsp tomato paste

Instructions:

Heat olive oil in a medium frying pan. Fry garlic and onion.

Add seasonings. Stir and cook for 2 minutes

Add crushed tomatoes and beans and stir. Add tomato paste and mix. Add vegetables of choice.

Mix and cook for a further 20 minutes

Serve with rice or sweet potatoes.
