Hearty and Healthy Lamb Stew
Cooking Time
5-6 hours
Ingredients (serves 4-5)

2-3 Lamb shanks

1/2 cup pearl barley

1/2 cup red or green lentils
-
1x sweet potato
-
1/2 pumpkin
-
1-2 small potato (nicola or carisma)

1L beef stock
Method:
1. Combine lamb shanks and vegetables in a slow cooker
2. Cover vegetables and lamb with stock (dont worry if entire mixture is not covered by stock)
3. Cook for 5-6 hours, stir every 2-3 hours
Notes:
You can experiment with any different types of vegetables. If mixture is too thick, once the cooking is over add water (50-100ml) until desired consistency is reached.
