Cooking Time: 10 minutes
1 clove of garlic crushed
1 onion finely diced
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon herbs
1 teaspoon of salt
1 cup dried cannellini or beans of choice
1 can crushed tomatoes
Vegetables of choice
1 tbsp tomato paste
Heat olive oil in a medium frying pan. Fry garlic and onion.
Add seasonings. Stir and cook for 2 minutes
Add crushed tomatoes and beans and stir.
Add tomato paste and mix. Add vegetables of choice.
Mix and cook for a further 20 minutes
Serve with rice or sweet potatoes.
