Cooking Time: 5-6 hours
Ingredients (Serves 4-5):
2-3 Lamb shanks
1/2 cup pearl barley
1/2 cup red or green lentils
1x sweet potato
1/2 pumpkin
1-2 small potato (nicola or carisma)
1L beef stock
Instructions:
Combine lamb shanks and vegetables in a slow cooker
Cover vegetables and lamb with stock (dont worry if entire mixture is not covered by stock)
Cook for 5-6 hours, stir every 2-3 hours
Notes
You can experiment with any different types of vegetables. If mixture is too thick, once the cooking is over add water (50-100ml) until desired consistency is reached.
